Preparation And Usage
INSTRUCTIONS
Organic ingredients:
- 1 pack Angélique Loaf Mix
- 2.5 ml (1/2 tsp.) instant yeast (Lallemand or Fleischmann)
- 360 g (1 1/2 cup) water at 33°C (92°F)
- 30 ml (2 tbsp.) light olive oil
- 30 ml (2 tbsp.) maple syrup or honey
- 5 ml (1 tsp.) apple cider vinegar
Preparation:
1. In a large bowl, combine loaf mix and yeast. Add lukewarm water, olive oil, maple syrup (or honey) and apple cider vinegar.
2. Stir vigorously with a wooden spoon.
3. Using a spatula, shape dough into a nice round shape.
4. Cover with a warm, damp cloth and let rise 1 hour in the oven with the light on, until dough doubles in size and small cracks are formed.
5. Stir dough once more with a wooden spoon.
6. Place dough in a 20 cm x 10 cm (8 x 4 inches) loaf pan lined with parchment paper and spread evenly with a wet spatula.
7. Place back in the oven with the light on, uncovered. Let rise until it doubles in size again (about 50 minutes), without opening the door. Dough will be ready to bake when a light finger-tip pressure leaves a mark.
8. Then, heat oven to 180°C (350°F), leaving dough in the oven, without opening the door.
9. Bake for approximately 1 hour, until golden brown.
10. Carefully unmould and let cool on a wire rack. Wait until bread has cooled down completely before slicing.
