This Knackwurst is a highly seasoned, garlicky, plump, finely ground sausage, originating from northern Germany in the mid 1500’s. The name derives from the German verb “knacken” meaning to crack. This refers to the swelling of the sausage during cooking, so that the skin becomes pressurized and tends to pop, often bursting with juices when bitten into.
