Chocolate mint chip cookies

1 cup (250 ml) all-purpose flour
1/2 cup (125 ml) cocoa powder
1/2 tsp (2 ml) baking soda
1/4 tsp (1 ml) salt
1/2 cup (125 ml) butter, softened
3/4 cup (175 ml) brown sugar, firmly packed
1/4 cup (60 ml) white sugar
1 egg
1 tsp (5 ml) vanilla extract
2 tbsp (30 ml) milk
1 package (225 g) compliments mint-flavoured baking chips
1. Preheat oven to 175℃ (350'F). Line baking sheets with parchment paper.
2. Combine flour, cocoa powder, baking soda and salt in a small bowl.
3. Cream butter, brown sugar and white sugar in a large bowl using an electric mixer on high speed for 1 minute. Add egg, vanilla extract and milk and mix on high speed for 30 seconds. Add the flour mixture and mix on low speed until just combined. Fold in mint- flavoured baking chips. Cover bowl with plastic wrap and chill dough in the refrigerator for 30 minutes.
4. Drop by heaping tablespoon (15 ml) onto prepared baking sheets 2 inches (5 cm) apart. Bake for 8- 10 minutes. Remove from oven and let cookies cool on baking sheets for 3 minutes. Transfer cookies to wire rack to cool completely.
