Preparation And Usage
Oven: preheat oven to 475°F. Place belly onto a foil lined baking tray and roast in oven for 30 minutes. Turn heat down to 325°F and continue to cook for another 30 minutes or until internal temperature of 400°F is reached. Remove belly from oven and cover with foil. Let rest for 20 minutes. Transfer belly from the baking tray to cutting board. Carve across width and serve. Try sliced belly on crostini as an appetizer or on a sandwich, on a salad, in a tortilla wrap, taco shell, on ramen noodles or in pho.
Barbecue: sear pork belly on all sides over a medium hot grill (350 to 425 ° F) for about 1 to 3 minutes per side. Wrap tightly in foil, return to grill, close lid and maintain temperature. Rotate packed belly periodically over 30 minutes or until internal temperature of 400°F is reached. Carefully remove from foil wrap, discard foil and moisture. Allow to rest 5 min. Return to grill and grill over same temp for 5 to 10 minutes until outside is crispy.
