Pappadums are Indian crisps made from lentil flour. Patak's pappadums are made to a traditional recipe and are sun dried to preserve their flavours. They are the perfect complement to a curry, can be enjoyed as a snack on its own, or simply with chutneys and pickles.
Authentic restaurant style pappadums
1 Hot stove top 3 secs heat 3 cm of vegetable oil in a frying pan, or use a deep fryer set to 180-200 ° C. Test the oil temperature by adding a small piece of pappadum. When it bubbles and expands the oil is ready.
2 Fry each pappadum individually for 3 seconds. They will expand quickly. Using tongs to flip and then remove from the hot oil. Place on a paper towel to absorb excess oil. The pappadums will become crisp on cooling. Serve warm.
1 800 W microwave 30 secs brush both sides of a pappadum with a little vegetable oil. Place a single pappadum in the microwave and cover with paper towel.
2 Cook on full power for around 30 seconds or until expanded. Appliances may vary so please adjust cooking time accordingly. Serve warm.
NOTE: NEVER LEAVE HOT OIL UNATTENDED.

Storage
Store in a cool, dry place. Once opened store the uncooked pappadums up to one month in a sealed container in cool, dry conditions.
