Grilled Portobello Mushrooms

Ingredients
- 4-5 portobello mushroom caps
- 1 package prepared rice
- Fresh cilantro
- 1 package shredded cheese
- 4 - 5 dollops butter
Directions
Step 1
Prepare 4 – 5 sheets of aluminum foil – large enough to enclose a mushroom cap.Step 2
Place 1 dollop of butter in the centre of each aluminum sheet (to hold the mushroom cap in place and add flavour).Step 3
Heat prepared rice per packaged instructions.Step 4
Scoop rice evenly amongst mushroom caps.Step 5
Shred cilantro and add on top of rice.Step 6
Sprinkle shredded cheese on top of rice – press down to keep in place.Step 7
Close aluminum foil around mushroom caps – tenting the top to keep cheese from sticking.Step 8
BBQ on indirect high heat for 20 – 25 minutes.Step 9
Unwrap and serve hot!
