Chicken Souvlaki Bowls

Succulent chicken, served over rice and completed with delicious creamy Tzatziki sauce, this quick, easy and heahthy meal will be a family favourite!

Ingredients

  • Chicken: 1 lb. chicken breast 500g
  • 2 tbsp olive oil 30 mL
  • 1 tbsp oregano 15 mL
  • 2 tsp garlic minced 10 mL
  • 1 tsp ground coriander 5 mL
  • 1/4 tsp paprika 1 mL
  • Juice of 1 lemon
  • Tzatziki Sauce: 1 cup plain yogurt 250 mL
  • 2 tbsp mayonnaise 30 mL
  • 2-3 tbsp Dried dill 45 mL
  • 2-3 tbsp dried parsley
  • 1/2 Cucumber
  • 3-4 garlic cloves
  • Juice of 1/2 a lemon
  • 1/4 tsp salt 1 mL
  • Turmeric Rice: 1 cup Basmati Rice 250 mL
  • 1/2 boullion cube
  • 1/8 tsp Turmeric 0.5 mL
  • Greek Salad: Romaine lettuce
  • Cherry Tomatoes
  • Red onion
  • Mini cucumbers
  • Green pepper
  • Feta Cheese
  • Olive Oil
  • salt, to taste
  • black pepper, to taste

Method

  1. Step 1

    Marinate cubed chicken breast in greek yogurt, minced garlic, spices, olive oil, salt & pepper.
  2. Step 2

    Place marinated chicken on skewers.
  3. Step 3

    Grill the chicken skewers for approx. 4-6 minutes on each side or until chicken reaches an internal temperature of 165.
  4. Step 4

    Brush Souvlaki chicken skewers with melted unsalted butter.
  5. Step 5

    For Tzatziki, combine greek yogurt, mayo, grated cucumber, dill, parsley, garlic, lemon juice and salt.
  6. Step 6

    For greek salad, combine chopped up veggies.
  7. Step 7

    Make a simple dressing with olive oil. Lemon juice, salt & pepper and pour over greek salad. Top with feta.
  8. Step 8

    Serve Chicken souvlaki skewers over cooked basmati rice with tzatziki and greek salad.
