Ingredients
- 4 ears of corn, husked and cut into two segments each
- 1/4 cup (60 ml) olive oil
- 2 tsp (10 ml) paprika for corn ribs and 1 tsp (5 ml) for spicy sauce
- 1 tsp (5 ml) smoked paprika
- 1/2 tsp (2.5 ml) garlic powder for corn ribs and 1/2 tsp (2.5 ml) for spicy sauce
- 1 tsp (5 ml) dried oregano
- 1/2 tsp (2.5 ml) salt
- 1/3 cup (80 ml) mayonnaise or vegan mayo
- 1 tbsp (15 ml) sambal oelek
- 1 tbsp (15 ml) lemon juice
- 1 tbsp (15 ml) finely chopped white onion
- 3 tbsp (45 ml) diced cherry tomatoes
- 1 tbsp (15 ml) finely chopped fresh parsley
- Pepper, to taste

Step 1
Preheat the barbecue to medium-high heat and oil the grill.Step 2
On a cutting board, stand a piece of corn vertically. Using a sharp chef’s knife, cut the corn in half. Place each half cut-side down, then slice into quarters. Repeat with the remaining corn.Step 3
In a large bowl, mix the olive oil, spices, salt, and pepper. Add the corn pieces and toss well to coat them evenly.Step 4
Grill the corn ribs on the barbecue for about 4 to 5 minutes per side.

In a small bowl, mix all the sauce ingredients together.Step 2
Serve alongside the corn ribs with the remaining toppings.
