Ingredients

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 onion, minced
  • 3 pears, diced
  • 5 cups vegetable stock
  • 2 medium potatoes, peeled and diced
  • 1 bunch of asparagus
  • 1/2 cup heavy cream
  • 1/2 cup parmesan cheese
  • 1 tsp nutmeg
  • Salt, to taste
  • Pepper, to taste

Directions

  1. Step 1

    In a large pot, melt the butter with olive oil and sauté the minced garlic and onions until softened.
  2. Step 2

    Add diced pears and cook for 2 minutes, stirring occasionally.
  3. Step 3

    Pour in vegetable stock and add diced potatoes. Bring to a boil and cook until potatoes are tender, about 15 minutes.

    Stir in the asparagus, nutmeg, salt, and pepper. Simmer for another 5 minutes until asparagus is softened.
  5. Step 5

    Using an immersion blender, blend the soup until smooth.
  6. Step 6

    Stir in the heavy cream and parmesan cheese, blending again until fully combined.
  7. Step 7

    Simmer the soup on low heat for 10 more minutes to allow the flavours to meld together.
  8. Step 8

    Serve hot with croutons or an extra sprinkle of parmesan cheese.
