Creamy Strawberry Pepperoncini Pasta

Pasta salads are super trendy on social media, and I love trying new ingredient combinations! This one celebrates seasonal strawberries and one of my favorite ingredients: pepperoncini! Ingredients

  • 1/2 cup (125 ml) mayonnaise
  • 2 tbsp (30 ml) white wine vinegar
  • 1 tbsp (15 ml) pepperoncini brine for the dressing and 1/3 cup (80 ml) sliced pepperoncini for the pasta salad
  • 1 tbsp (15 ml) maple syrup or honey
  • 1 garlic clove, minced
  • 1 tsp (5 ml) oregano
  • 1 tbsp (15 ml) nutritional yeast
  • 3/4 tsp (3.75 ml) salt
  • lots of pepper
  • 400 g of short pasta of your choice
  • 1 can (540 ml) chickpeas, rinsed and drained
  • 1/2 cup (125 ml) diced strawberries
  • 1/3 cup (80 ml) roughly chopped sun-dried tomatoes
  • 1 cup (250 ml) basil leaves
  • 1/4 cup (60 ml) finely sliced red onion (or more to taste)

Directions

Creamy Dressing

  1. Step 1

    In a small bowl, mix all the dressing ingredients together (mayonnaise, white wine vinegar, pepperoncini brine, maple syrup, garlic clove, oregano, nutritional yeast, salt and pepper).

Pasta Salad

  1. Step 1

    In a pot of salted boiling water, cook the pasta according to package instructions. Rinse with cold water and drain.
  2. Step 2

    In a large bowl, combine with the creamy dressing all salad ingredients (pasta, chickpeas, strawberries, sun-dried tomatoes, basil leaves, pepperoncini and red onion)
  3. Step 3

    Serve!
