Gluten-Free Almond Apple Crisp

Ingredients
- 4 Golden Delicious or Jonagold apples, peeled and chopped (about 5 cups/1.25 L)
- 1 tbsp cornstarch 15 mL
- 1 tbsp maple syrup 15 mL
- ½ tsp lemon zest 2 mL
- 1 tbsp lemon juice 15 mL
- 1 tsp vanilla extract 5 mL
- ¼ cup firmly packed brown sugar 60 mL
- ¼ cup ground almonds 60 mL
- ¼ cup slivered almonds 60 mL
- 2 tbsp melted coconut oil 30 mL
Directions
Step 1
Preheat oven to 350°F (180°C). In bowl, toss apples with cornstarch, maple syrup, lemon zest, lemon juice and vanilla. Divide among 4 (1-cup/250-mL) ramekins.Step 2
In another bowl, stir together brown sugar, ground almonds, slivered almonds and coconut oil; sprinkle evenly over apples. Bake 30 to 35 min. until apples are soft and juices bubbling. Serve warm with dollops of whipped cream or vanilla ice cream.
