This Everything Bagel Breakfast Casserole is a savoury and satisfying dish, perfect for brunch or meal prep. Made with toasted bagel chunks, caramelized onions, sharp cheddar, cream cheese, and a rich egg mixture, it’s seasoned with everything bagel seasoning for a burst of flavour. Baked to perfection, this dish is topped with fresh chives and optional microgreens for added freshness.

Ingredients

  • 1 red onion, thinly sliced
  • 4 everything bagels, cut into chunks
  • 4 green onions, chopped
  • 2 cups sharp cheddar cheese, shredded
  • salt, to taste
  • black pepper, to taste
  • 8 eggs
  • 2 cups milk (or dairy-free alternative)
  • 2 tbsp grainy Dijon mustard
  • 1 tbsp everything bagel seasoning
  • 4 oz cream cheese, cut into chunks
  • 2-3 tbsp chives, chopped
  • Microgreens (optional, for garnish)

Directions

  1. Step 1

    Preheat oven to 350°F (175°C).
  2. Step 2

    In a skillet over medium heat, cook the sliced red onion with a drizzle of olive oil until soft and caramelized. Set aside.
  3. Step 3

    Place the bagel chunks in a greased baking dish. Add the caramelized onions, green onions, and half of the shredded cheddar cheese. Season with salt and pepper, then toss to combine.

    In a separate bowl, whisk together the eggs, milk, grainy Dijon mustard, and everything bagel seasoning.

    Pour the egg mixture evenly over the bagel mixture. Top with the remaining cheddar cheese and distribute the cream cheese chunks throughout.

    Bake for 40 minutes, or until the casserole is set and golden on top.

    Sprinkle with chopped chives and microgreens (if using). Serve warm and enjoy!
