Ingredients
- 190 g light brown sugar
- 220 g ground almonds
- 45 g desiccated coconut
- 50 g tapioca starch
- 1 tsp baking powder
- 1 tsp ground cardamom
- 1 tsp vanilla extract
- 150 g melted salted butter
- 3 eggs
- 400 g Honeycrisp apples, peeled and roughly diced
- 50 g slivered almonds (for topping)
Directions
Step 1
Preheat the oven to 375°F (190°C). Prepare a cake tin by lining the bottom with parchment paper.Step 2
In a large mixing bowl, combine the light brown sugar, ground almonds, desiccated coconut, tapioca starch, baking powder, and ground cardamom. Mix well.Step 3
In a separate bowl, whisk together the vanilla, melted butter, and eggs until smooth.Step 4
Using a pastry spatula, gently fold the wet ingredients into the dry ingredients until a batter forms.Step 5
Fold in the diced Honeycrisp apples until evenly distributed.Step 6
Pour the batter into the prepared cake tin and spread it evenly. Sprinkle the slivered almonds on top.Step 7
Bake for 25–40 minutes, depending on the depth of your cake tin, or until the top is golden brown and a toothpick inserted in the center comes out clean.Step 8
