Ingredients

  • 4-5 portobello mushroom caps
  • 1 package prepared rice
  • Fresh cilantro
  • 1 package shredded cheese
  • 4 - 5 dollops butter

Method

  1. Step 1

    Prepare 4 – 5 sheets of aluminum foil – large enough to enclose a mushroom cap.
  2. Step 2

    Place 1 dollop of butter in the centre of each aluminum sheet (to hold the mushroom cap in place and add flavour).
  3. Step 3

    Heat prepared rice per packaged instructions.
  4. Step 4

    Scoop rice evenly amongst mushroom caps.
  5. Step 5

    Shred cilantro and add on top of rice.
  6. Step 6

    Sprinkle shredded cheese on top of rice – press down to keep in place.
  7. Step 7

    Close aluminum foil around mushroom caps – tenting the top to keep cheese from sticking.
  8. Step 8

    BBQ on indirect high heat for 20 – 25 minutes.
  9. Step 9

    Unwrap and serve hot!
