Ingredients
- 2 packs of halloumi, cubed
- 1 cup cubed pineapple
- 3-5 chipotle peppers in adobo sauce (adjust based on your spice preference)
- 1 roasted red pepper
- 2 cloves of garlic
- 1 tablespoon oil
- 1 tablespoon maple syrup
- Juice of half a lime
- 5 tablespoons mayo
- Salt
Directions
Step 1
Soak wooden skewers in water for at least 10 minutes to prevent them from burning on the grill.Step 2
Blend chipotle peppers, roasted red pepper, garlic, maple syrup, oil, lime juice, and salt into a smooth marinade.Step 3
In a bowl, toss the halloumi and pineapple with the marinade until well coated. Let it marinate for 15 minutes or up to 2 hours for a deeper flavour.Step 4
Thread the marinated halloumi and pineapple onto the soaked skewers, alternating between the two. Set aside any leftover marinade.Step 5
Grill the skewers on a barbecue or griddle pan over medium-high heat until grill marks appear and the cheese is golden.Step 6
Mix the reserved marinade with the remaining mayo to make a creamy dipping sauce.Step 7
Garnish the skewers with chopped cilantro and serve with the chipotle mayo on the side.
