This delicious Honeycrisp Apple Cake combines sweet apples with warm cardamom, almonds, and a hint of coconut. It’s perfect for a cozy dessert or an afternoon treat. The slivered almonds on top add a satisfying crunch to every bite.

Ingredients

  • 190 g light brown sugar
  • 220 g ground almonds
  • 45 g desiccated coconut
  • 50 g tapioca starch
  • 1 tsp baking powder
  • 1 tsp ground cardamom
  • 1 tsp vanilla extract
  • 150 g melted salted butter
  • 3 eggs
  • 400 g Honeycrisp apples, peeled and roughly diced
  • 50 g slivered almonds (for topping)

Directions

  1. Step 1

    Preheat the oven to 375°F (190°C). Prepare a cake tin by lining the bottom with parchment paper.
  2. Step 2

    In a large mixing bowl, combine the light brown sugar, ground almonds, desiccated coconut, tapioca starch, baking powder, and ground cardamom. Mix well.
  3. Step 3

    In a separate bowl, whisk together the vanilla, melted butter, and eggs until smooth.
  4. Step 4

    Using a pastry spatula, gently fold the wet ingredients into the dry ingredients until a batter forms.
  5. Step 5

    Fold in the diced Honeycrisp apples until evenly distributed.
  6. Step 6

    Pour the batter into the prepared cake tin and spread it evenly. Sprinkle the slivered almonds on top.
  7. Step 7

    Bake for 25–40 minutes, depending on the depth of your cake tin, or until the top is golden brown and a toothpick inserted in the center comes out clean.

    Let the cake cool slightly before serving. Enjoy!
