Ingredients

  • 300g (1 1/3 cups) Unbleached All-purpose flour for Pie Dough and 30g (1/4 cups) for Pecan Filling
  • 130g icing sugar (1 cup)
  • 2g salt (1/2 tsp)
  • 130g cold butter, cubed (1/2 cup)
  • 4 eggs
  • 90g cane sugar (1/2 cup)
  • 80mL Panache Amber maple syrup (1/4 cup)
  • 100g chopped pecans (3/4 cup)
  • 250g half pecans (2 1/2 cups)

Pie Dough

  1. Step 1

    In a large bowl, combine cold butter, flour (300g), icing sugar, and salt. Use your hands to rub the butter into the dry ingredients until the mixture resembles coarse sand.
  2. Step 2

    Create a well in the center and whisk in the egg. Use a fork to begin incorporating, then gently knead by hand until the dough comes together.
  3. Step 3

    Roll the dough into a one-inch-thick rectangle, wrap it tightly, and refrigerate for at least 1 hour.
  4. Step 4

    Remove dough from the fridge and let it sit at room temperature for 5-10 minutes until softened.
  5. Step 5

    Roll the dough on a floured surface until it’s 3-5 mm thick. Drape it over a rolling pin and carefully transfer it to a greased 9-inch tart pan. Press the dough into the pan and remove excess by rolling the pin over the edges. Refrigerate the crust while preparing the filling.

Pecan Filling

  1. Step 1

    Whisk together the eggs, sugar, and maple syrup in a bowl.
  2. Step 2

    Sift in the flour (30g) and whisk again until smooth.
  3. Step 3

    Stir in the finely chopped pecans and mix well.

Assembly & Baking

  1. Step 1

    Preheat oven to 360°F (180°C).
  2. Step 2

    Pour the pecan filling into the prepared pie shell, filling it 3/4 of the way.
  3. Step 3

    Arrange half pecans in a circular pattern on top of the filling.
  4. Step 4

    Bake for 35 minutes, or until the pie is golden brown.
  5. Step 5

    Serve warm with a scoop of vanilla ice cream for an extra treat.
