A nostalgic, chewy treat with marshmallows, peanut butter, and crunchy cornflakes. These no-bake cookies are easy to prepare and perfect for snacking or holiday gifting.

Ingredients

  • 2 tbsp butter
  • 250g mini marshmallows
  • ⅔ cup Compliments Smooth Peanut Butter
  • 1 tsp vanilla extract
  • 3 cups Compliments Cereal Cornflakes

Directions

  1. Step 1

    Line a baking sheet with parchment paper and set aside.
  2. Step 2

    Melt the butter in a large pot over medium-low heat.
  3. Step 3

    Add the marshmallows and stir continuously until melted.
  4. Step 4

    Stir in Compliments peanut butter until fully combined.
  5. Step 5

    Remove from heat and immediately stir in the vanilla extract and Compliments Cornflakes. Mix until all the cornflakes are coated.
  6. Step 6

    Using a tablespoon, scoop the mixture into mounds and place them onto the parchment-lined baking sheet.
  7. Step 7

    Allow to cool. Store at room temperature in an airtight container for up to 1 week. Note: If not sealed, the cookies will become hard. Do not refrigerate.
