Ingredients

  • 1/4 cup butter, at room temperature
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • 3/4 cup milk (or dairy-free alternative)
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup chopped pecans
  • 1 1/2 cups brown sugar
  • 1 1/2 cups water
  • 1/2 cup maple syrup

Directions

  1. Step 1

Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish.
  2. Step 2

In a large bowl, cream the butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. Step 3

Gradually add the milk, mixing until combined.
  4. Step 4

In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Step 5

Add the dry ingredients to the wet mixture, stirring until just combined. Fold in the pecans.
  6. Step 6

Transfer the batter into the greased baking dish.
  7. Step 7

In a small saucepan, combine the brown sugar, water, and maple syrup. Bring to a gentle boil over medium heat, then reduce to low and simmer for 10 minutes until slightly thickened.
  8. Step 8

Gently pour the warm maple mixture over the cake batter. Do not stir.
  9. Step 9

Bake for 40-50 minutes, until the edges pull away from the dish and the top is golden.
  10. Step 10

Let cool slightly before serving. Enjoy warm with vanilla ice cream if desired.
