Pizza Dough Pockets

Ingredients
- Pizza Dough - 1 frozen pizza dough
- 1 Fresh mozzarella ball
- 5-6 strips Chicken Bacon
- 1 Green bell pepper
- Pickled jalapeños
- 1 egg
- Pizza Sauce: 1 tbsp Olive oil 15 mL
- 1 Shallot
- 4 tbsp Tomato paste 60 mL
- 1 cup water 250 mL
- 1/2 tsp salt 0.5 mL
- 1/2 tsp sugar 0.5 mL
- Juice 1/2 Lemon
- 4-5 leaves Fresh basil
- Spicy Aioli: 7-8 tbsp Roasted Garlic Mayo
- 1/4 tsp Cayenne powder 1 mL
- 1 tbsp Pickled Jalapeno juice 15 mL
- salt, to taste
- pepper, to taste
Directions
Step 1
To make the pizza sauce, to a heated pan with olive oil, sauté a finely diced shallot.Step 2
Add tomato paste to the pan and cook on a medium heat for 4-6 minutes or until tomato paste colour deepens.Step 3
Pour water in the pan, along with salt & sugar. Bring to a boil and simmer on medium heat for 15-20 minutes or until liquid has reduced and sauce is thickened. Turn off the heat and add fresh basil.Step 4
Divide the pizza dough ball into 4 equal parts. Shape each section into a ball and roll out into a circle with a rolling pin.Step 5
On only 1/2 the rolled out dough circle, spread a layer of the pizza sauce. Add the toppings (cooked chicken bacon, diced bell pepper & pickled jalapeños) and fresh mozzarella.Step 6
Lifting from the half of the dough that has nothing on it, close up the pizza dough pocket and seal the edges with a fork. Poke holes into the top to allow the steam to come through. Not poking enough holes will cause the pizza dough pocket to burst while cooking.Step 7
Brush the top with an egg wash and add a sprinkle of sea salt.Step 8
Bake at 435 degrees f for 20-30 minutes or until golden brown.
