
Fresh Mozzarella and Peach Summer Board

This vibrant summer board is a fresh, flavorful twist on the classic charcuterie spread. Juicy sliced peaches are lightly tossed in olive oil and seasoning, paired with savoury Panache Misto Antipasto meats, creamy fresh mozzarella, and bright quartered tomatoes with herbs and oil. Add in fresh basil and mint, and elevate it with Panache frozen appetizers like bacon-wrapped scallops and Vietnamese-style spring rolls for a stunning, ready-to-entertain spread that’s equal parts easy and elegant.Time and servings

Ingredients
- 3 tomatoes, quartered
- 3 peaches, quartered
- 2 tbps of olive oil, divided
- 2 tbsp of honey, divided
- Salt to taste
- Pepper to taste
- Panache Frozen appetizers of your choice! I went with Tempura Shrimp and Vietnamese spring rolls.
- Panache Salami
- Compliments Basil
- Compliments Mint
- Fresh Mozzarella Cheese, sliced
Directions
Step 1
Start by cooking your Panache appetizers according to package directions.Step 2
Add the quartered tomatoes to a small bowl and drizzle 1 tbsp of olive oil, 1 tbsp of honey, salt and pepper and toss. Do the same with the peaches with the remaining oil and honey. Set aside.Step 3
Assemble your board by adding all of the ingredients into rows. I started with peaches (which I garnished with mint), then the tempura shrimp, then the fresh mozzarella, the spring rolls, salami, then the tomatoes, which I garnished with fresh basil.
