Mexican-Style Green Rice

Ingredients
- 1 1/2 cups (375 mL) basmati rice
- 1 tbsp (15 mL) Roasted Garlic Seasoning Paste
- 1 tbsp (15 mL) olive oil
- 1 tsp (5 mL) salt
- 1 tsp (5 mL) cumin
- 2 cups finely chopped green onions 500 mL
- 2 tbsp (30 mL) seeded and finely chopped jalapeño pepper
- 2 cups (500 mL) fresh cilantro, finely chopped
Directions
Step 1
Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear. Drain. In a saucepan, mix rice, garlic paste, olive oil, salt and cumin in 3 cups (750 mL) water. Bring to a boil. Reduce heat to medium-low and cook uncovered until almost all the water is absorbed, 8 to 10 min. Stir with a fork, cover, reduce the heat to low and cook another 6 to 8 min. until rice is tender.Step 2
Remove rice from the heat and fluff with a fork. Toss with remaining ingredients. Serve warm or at room temperature.
