Balsamic Chicken Salad

Ingredients
- 1 package organic baby spinach 142g
- 1 rotisserie chicken, skin removed and meat diced
- 1/2 pint grape tomatoes, halved 250g
- 1 orange pepper, cut into thin strips
- 1 zucchini, thinly sliced into rounds
- 1/3 cup balsamic vinaigrette 75mL
- 2 tbsp Pine nuts, toasted 30g
- 1/2 cup goat’s milk cheese crumbles 113g
- salt to taste
- pepper to taste
Directions
Step 1
Place the spinach on a platter or salad bowl.Step 2
In a mixing bowl, gently toss together the chicken, tomatoes, orange pepper, zucchini, and balsamic dressing. Lightly season with sea salt and pepper.Step 3
Spoon the chicken mixture on top of the baby spinach. Sprinkle with the goat's cheese crumbles and toasted pine nuts.
