Sausage and broccoli fried rice

Ingredients
- 3 mild or spicy Italian sausages
- 30 ml (2 tbsp) vegetable oil
- 3 eggs, lightly beaten
- 1 broccoli crown, cut into small florets
- 1 large onion, thinly sliced
- 1 garlic clove, finely chopped
- 125 ml (1/2 cup) chicken broth
- 600 g (4 cups) cooked long-grain white rice, cold (see chef’s tip)
- 1 lemon, quartered
Directions
Step 1
In a large non-stick skillet over medium-high heat, cook the sausages in half of the oil for 5 minutes or until nicely browned. Cover and continue to cook over low heat for 10 minutes or until the sausages are cooked through. Remove the sausages from the skillet and let cool. On a work surface, cut the sausages into rounds and set aside in a large bowl.Step 2
In the same skillet over medium-high heat, cook the eggs in the oil left in the skillet, stirring for 30 seconds or until cooked through. Set aside in the bowl of sausages.Step 3
In the same skillet, soften the vegetables in the remaining oil. Deglaze with the broth. Let reduce until the liquid has almost completely evaporated. Set aside in the bowl of sausages.Step 4
In the same skillet over high heat, brown the cooked rice for 5 minutes. Add more oil as needed. Add the sausage and vegetable mixture. Stir for 2 minutes to heat everything through. Season with salt and pepper. Remove the skillet from the heat. Garnish with the herbs and lemon wedges.Step 5
Chef’s tip: To obtain 4 cups (600 g) cooked rice, you will need to cook 1 ½ cups (345 g) raw rice.
