Ingredients
- 1 tbsp butter
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 1 onion, minced
- 3 pears, diced
- 5 cups vegetable stock
- 2 medium potatoes, peeled and diced
- 1 bunch of asparagus
- 1/2 cup heavy cream
- 1/2 cup parmesan cheese
- 1 tsp nutmeg
- Salt, to taste
- Pepper, to taste
Directions
Step 1
In a large pot, melt the butter with olive oil and sauté the minced garlic and onions until softened.Step 2
Add diced pears and cook for 2 minutes, stirring occasionally.Step 3
Pour in vegetable stock and add diced potatoes. Bring to a boil and cook until potatoes are tender, about 15 minutes.Step 4
Stir in the asparagus, nutmeg, salt, and pepper. Simmer for another 5 minutes until asparagus is softened.Step 5
Using an immersion blender, blend the soup until smooth.Step 6
Stir in the heavy cream and parmesan cheese, blending again until fully combined.Step 7
Simmer the soup on low heat for 10 more minutes to allow the flavours to meld together.Step 8
Serve hot with croutons or an extra sprinkle of parmesan cheese.
