Spaghetti Carbonara

Ingredients

  • 1 tsp salt
  • 300 g spaghetti
  • 4 egg yolks
  • 1 whole egg
  • ⅔ cup grated pecorino romano or parmesan
  • 100 g pancetta
  • Freshly ground black pepper, to taste
  • Optional: grated Parmigiano Reggiano, for serving
  • Gremolata:
  • 3 tbsp finely chopped parsley
  • Zest of 1 lemon

Directions

  • Step 1

    Bring a large pot of salted water to a boil. Cook the pasta until al dente and reserve 1 cup of the pasta cooking water.
  • Step 2

    In a large bowl, mix the eggs and pecorino. Set aside.
  • Step 3

    Cut the pancetta into 1 cm cubes and fry in a small pan over medium heat for about 3–4 minutes, until most of the fat has rendered and the pancetta is nicely browned. Set aside.
  • Step 4

    Add 2 tbsp of the rendered pork fat to the egg mixture.
  • Step 5

    Drain the pasta and add it directly to the bowl. Toss vigorously and add ½ cup of the reserved cooking water. Add half of the pancetta and season with ½ tsp pepper and a pinch of salt. Taste and serve in large bowls. Top with parmesan or pecorino and gremolata.
