
Spaghetti Carbonara

Ingredients
- 1 tsp salt
- 300 g spaghetti
- 4 egg yolks
- 1 whole egg
- ⅔ cup grated pecorino romano or parmesan
- 100 g pancetta
- Freshly ground black pepper, to taste
- Optional: grated Parmigiano Reggiano, for serving
- Gremolata:
- 3 tbsp finely chopped parsley
- Zest of 1 lemon
Directions
Step 1
Bring a large pot of salted water to a boil. Cook the pasta until al dente and reserve 1 cup of the pasta cooking water.Step 2
In a large bowl, mix the eggs and pecorino. Set aside.Step 3
Cut the pancetta into 1 cm cubes and fry in a small pan over medium heat for about 3–4 minutes, until most of the fat has rendered and the pancetta is nicely browned. Set aside.Step 4
Add 2 tbsp of the rendered pork fat to the egg mixture.Step 5
Drain the pasta and add it directly to the bowl. Toss vigorously and add ½ cup of the reserved cooking water. Add half of the pancetta and season with ½ tsp pepper and a pinch of salt. Taste and serve in large bowls. Top with parmesan or pecorino and gremolata.
