Helpful tips
- Keep milk and cream refrigerated at 1-4°C (33-40°F).
- When whipping cream, use a cool, straight sided bowl and chilled beaters.
- Beat vigorously with a hand mixer at high speed for 1 to 1½ minutes. Sugar, icing sugar or flavour may be added while mixing.
- When properly whipped, stiff peaks will form.
