VANILLA CUPCAKES Yields 12 cupcakes (or one 8" round cake) Preparation: 10 min | Cooking: 20 min (cake: 30-35 min) INGREDIENTS - 1 package Dainty gluten-free Vanilla Cupcake Mix - 2 large eggs - 1/2 cup (125 mL) milk - 1/2 cup (125 mL) vegetable oil 1. Preheat oven to 350°F (180°C). Line a 12-muffin tin with paper liners. 2. Empty all ingredients into a large bowl. Beat with an electric mixer on medium speed for 2 minutes. 3. Scoop approx 1/4 cup (60 mL) of batter into each liner. 4. Bake for 20 minutes (30-35 minutes for cake) until a toothpick comes out clean. SIMPLE VANILLA ICING: Beat 1 cup (250 mL) icing sugar with 1/4 cup (60 mL) soft butter, 2 tbsp milk (or a bit more if needed) and 1 tsp vanilla extract.
