CINNAMON DOUGHNUT PANCAKES Yields 10 pancakes Preparation: 5 min | Cooking: 15-20 min INGREDIENTS - 1 cup (250 mL) Dainty gluten-free Doughnut Pancake Mix - 1 large egg - 1/2 cup (125 mL) milk - 2 tbsp vegetable oil + 1/4 cup (60 mL) for cooking - 1/2 cup (125 ml) sugar - 2 tsp ground cinnamon 1. In a medium size bowl whisk together the pancake mix, egg, milk and 2 tbsp of oil until combined. 2. Heat a frying pan over medium-low heat and add 1/4 cup (60 mL) of oil. 3. Scoop 2 tbsp batter onto the pan. Cook 2-3 minutes, flip and cook another 2 minutes. 4. In another bowl, mix sugar and cinnamon. Coat doughnut pancake with mix and serve warm.
