Product Information
Organic sifted pastry flour is produced from organic wheat. Its fragile gluten and low absorption capacity offer the characteristics sought after in pastry to maximize the crumbly of cookies and the softness of cakes. Halfway between whole flour and white flour, this flour absorbs more than white pastry flour but allows for lighter and less dense pastry products than whole flour. It's the best of both worlds. Organic sifted pastry flour is as its name suggests a sifted flour, so part of the bran has been removed to make it lighter, it retains however a part of the small bran which gives it a darker color.
