Directions: 1) In large pot, sauté 1 onion in 4 tbsp butter. 2) Add 6 C water, 3 chopped carrots, 3 chopped celery stalks, 4 medium cubed potatoes, and bean portion of soup package (pinch bag to remove top portion of beans). 3) Boil then simmer covered for 1 hr until beans are soft, stirring regularly. 4) Add remaining package contents, 2 ½-3 ½ C cream or milk, 120 g can crab meat with juice, 140 g can clams with juice, 2 tbsp lemon juice. Simmer for 20-30 min, or until seafood and rice are cooked, stirring regularly. Add extra water or milk as needed. Season with salt and pepper. Option: add lobster, scallops, white fish, prawns.
