Cooking & Usage Tips
Braise: Thaw in fridge, marinate or season lamb shoulder chops, preheat oven to 300°F. In a skillet, heat olive oil over medium heat, add lamb shoulder chops and sear until browned, then drain the lamb shoulder chops on a plate. Keep the drippings in the skillet, then sauté onions and garlic in drippings until tender for approximately 5 minutes. Apply this mixture to the drained lamb shoulder chops in a baking dish, add rosemary and beef broth (can also add other vegetables and tomato paste). Cover baking dish and bake in preheated oven for 3 hours.
Grill: Thaw in fridge, marinate or season lamb shoulder chops, preheat grill to 450°F and place marinated lamb shoulder chops on it. Depending on the thickness of the cut and how well you want the meat cooked, grill the lamb for 5-7 minutes on each side. Transfer lamb shoulder chops to platter, cover, and let rest 5 minutes before serving. Can be served as an appetizer or entrée.
