How to cook a genuine risotto
Ingredients for 4 servings: 320 g Riso Bello Risotto rice, 4 cups heated stock (vegetable or chicken or beef stock), chopped onion, 40 g butter, parmesan or other grated cheese, 1/2 cup dry white wine. Salt, mushrooms, seafood, vegetables, or any other ingredients of your choice may be added to make a delicious and authentic Italian-style risotto.
1 - In a medium-sized heavy-bottomed saucepan, sauté the onion in butter until golden, along with any additional ingredients (mushrooms, etc.). Add the rice and stir until well-coated and translucent.
2 - Stir in 1 cup of the hot stock and simmer gently.
3 - When the stock has been absorbed, add another cup, and continue in this way through the 16-18 minutes of cooking time.
4 - Stir in parmesan. Salt to taste. Remove from heat, cover and set aside for 2 minutes before serving.
Serving suggestion
- Add finely chopped courgettes and carrots at step 1 just after the onions. Add peas and finely chopped fresh tomato in step 2 just after having added the stock.
