Cooking & Usage Tips
You will need:
2 large eggs
⅔ cup vegetable oil
2 cups grated zucchini, with skin
½ cup chopped walnuts and/or chocolate chips (optional)
1 Heat oven to 350ºF. Grease the bottom and sides of a 9 inch loaf pan or two 8 inch loaf pans.
2 In a large bowl, beat zucchini bread mix, oil, eggs and grated zucchini, until thoroughly combined. If desired, stir in chocolate chips and/or chopped nuts. Pour into pan.
3 Bake 60-70 min., or until toothpick inserted info center comes out clean. If using two disposable aluminum pans, bake 45-55 min. Cool 10 minutes in pan, then cool completely on wire rack before serving.
Alternate baking times:
1. 3 mini loaf pans : 30 to 35 min
2. Muffin pan : 20-25 minutes
