Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¼ tsp ground black pepper (optional)
- ½ cup cold butter, cubed
- 2 large eggs, cold
- 2 tbsp maple syrup
- 1 cup shredded sharp cheddar cheese
- 6 slices of bacon, cooked and roughly chopped
- ½ cup cold heavy cream
Directions
Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.Step 2
Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, and black pepper.Step 3
Cut in butter: Add cold cubed butter and work it into the flour mixture using your fingers or a pastry cutter until it resembles coarse crumbs.Step 4
Add wet ingredients: Stir in eggs, maple syrup, and cold heavy cream. Mix just until combined — do not overmix.Step 5
Fold in fillings: Gently fold in shredded cheddar cheese and chopped baconStep 6
Create flaky layers: Turn dough onto a lightly floured surface. Shape into a rectangle, cut in half, stack the pieces, and press down. Repeat this process 2–3 times to create flaky layers.Step 7
Shape: Form dough into an 8-inch circle and cut into 8 wedges.Step 8
Chill: Place scones on prepared baking sheet and refrigerate for at least 30 minutes.Step 9
Bake: Brush tops with heavy cream. Bake for 18–20 minutes, or until golden brown.Step 10
Cool slightly before serving. Enjoy warm.
