Chicken Souvlaki Bowls

Succulent chicken, served over rice and completed with delicious creamy Tzatziki sauce, this quick, easy and heahthy meal will be a family favourite!Time and servings

Ingredients
- Chicken: 1 lb. chicken breast 500g
- 2 tbsp olive oil 30 mL
- 1 tbsp oregano 15 mL
- 2 tsp garlic minced 10 mL
- 1 tsp ground coriander 5 mL
- 1/4 tsp paprika 1 mL
- Juice of 1 lemon
- Tzatziki Sauce: 1 cup plain yogurt 250 mL
- 2 tbsp mayonnaise 30 mL
- 2-3 tbsp Dried dill 45 mL
- 2-3 tbsp dried parsley
- 1/2 Cucumber
- 3-4 garlic cloves
- Juice of 1/2 a lemon
- 1/4 tsp salt 1 mL
- Turmeric Rice: 1 cup Basmati Rice 250 mL
- 1/2 boullion cube
- 1/8 tsp Turmeric 0.5 mL
- Greek Salad: Romaine lettuce
- Cherry Tomatoes
- Red onion
- Mini cucumbers
- Green pepper
- Feta Cheese
- Olive Oil
- salt, to taste
- black pepper, to taste
Method
Step 1
Marinate cubed chicken breast in greek yogurt, minced garlic, spices, olive oil, salt & pepper.Step 2
Place marinated chicken on skewers.Step 3
Grill the chicken skewers for approx. 4-6 minutes on each side or until chicken reaches an internal temperature of 165.Step 4
Brush Souvlaki chicken skewers with melted unsalted butter.Step 5
For Tzatziki, combine greek yogurt, mayo, grated cucumber, dill, parsley, garlic, lemon juice and salt.Step 6
For greek salad, combine chopped up veggies.Step 7
Make a simple dressing with olive oil. Lemon juice, salt & pepper and pour over greek salad. Top with feta.Step 8
Serve Chicken souvlaki skewers over cooked basmati rice with tzatziki and greek salad.
