Ingredients
- ½ cup Compliments Smooth Peanut Butter
- 1 cup pure pumpkin puree (not pumpkin pie filling)
- 1 cup rolled oats
- 1 ½ cups Compliments Cereal Cornflakes
Directions
Step 1
Line a baking sheet with parchment paper and set aside.Step 2
In a small pot over medium heat, stir together the Compliments peanut butter and pumpkin puree until the peanut butter has melted.Step 3
Add the rolled oats and Compliments Cornflakes to a large bowl.Step 4
Pour the peanut butter and pumpkin mixture over the oats and cornflakes. Mix to combine. The mixture will be thick.Step 5
Set aside until the mixture is cool enough to handle.Step 6
Use a tablespoon or small cookie scoop to portion the mixture into small bites. Roll into balls and place them on the parchment-lined baking sheet.Step 7
Store in an airtight container in the fridge for up to 1 week or in the freezer for up to 3 months.
