Ingredients

  • ½ cup Compliments Smooth Peanut Butter
  • 1 cup pure pumpkin puree (not pumpkin pie filling)
  • 1 cup rolled oats
  • 1 ½ cups Compliments Cereal Cornflakes

Directions

  1. Step 1

    Line a baking sheet with parchment paper and set aside.

  2. Step 2

    In a small pot over medium heat, stir together the Compliments peanut butter and pumpkin puree until the peanut butter has melted.

  3. Step 3

    Add the rolled oats and Compliments Cornflakes to a large bowl.

  4. Step 4

    Pour the peanut butter and pumpkin mixture over the oats and cornflakes. Mix to combine. The mixture will be thick.

  5. Step 5

    Set aside until the mixture is cool enough to handle.

  6. Step 6

    Use a tablespoon or small cookie scoop to portion the mixture into small bites. Roll into balls and place them on the parchment-lined baking sheet.

  7. Step 7

    Store in an airtight container in the fridge for up to 1 week or in the freezer for up to 3 months.
