This Everything Bagel Breakfast Casserole is a savoury and satisfying dish, perfect for brunch or meal prep. Made with toasted bagel chunks, caramelized onions, sharp cheddar, cream cheese, and a rich egg mixture, it’s seasoned with everything bagel seasoning for a burst of flavour. Ingredients
- 1 red onion, thinly sliced
- 4 everything bagels, cut into chunks
- 4 green onions, chopped
- 2 cups sharp cheddar cheese, shredded
- salt, to taste
- black pepper, to taste
- 8 eggs
- 2 cups milk (or dairy-free alternative)
- 2 tbsp grainy Dijon mustard
- 1 tbsp everything bagel seasoning
- 4 oz cream cheese, cut into chunks
- 2-3 tbsp chives, chopped
- Microgreens (optional, for garnish)
Directions
Step 1
Preheat oven to 350°F (175°C).Step 2
In a skillet over medium heat, cook the sliced red onion with a drizzle of olive oil until soft and caramelized. Set aside.Step 3
Place the bagel chunks in a greased baking dish. Add the caramelized onions, green onions, and half of the shredded cheddar cheese. Season with salt and pepper, then toss to combine.Step 4
In a separate bowl, whisk together the eggs, milk, grainy Dijon mustard, and everything bagel seasoning.Step 5
Pour the egg mixture evenly over the bagel mixture. Top with the remaining cheddar cheese and distribute the cream cheese chunks throughout.Step 6
Bake for 40 minutes, or until the casserole is set and golden on top.Step 7
Sprinkle with chopped chives and microgreens (if using). Serve warm and enjoy!
