Ingredients

  • 1 1/3 cups all-purpose flour, plus more for dusting 325 mL
  • 2/3 cup quick oats, plus more for dusting biscuit tops 150 mL
  • 1/2 tsp salt
  • 1/4 tsp ground cayenne pepper 1 mL
  • 1 tbsp sugar 15 mL
  • 2 tsp baking powder 10 mL
  • 1 tbsp finely chopped fresh chives 15 mL
  • 2/3 cup shredded old Cheddar cheese, loosely packed 150 mL
  • 1/4 cup cold unsalted butter, in small pieces 60 mL
  • 2/3 cup buttermilk, plus a bit more forbrushing biscuit tops 150 mL

Method

  1. Step 1

    Preheat oven to 425°F (220°C). Combine flour, oats, salt, cayenne pepper, sugar and baking powder in a bowl and mix well. Add chives and Cheddar and toss until evenly distributed.
  2. Step 2

    With two knives or cool fingertips, mix in butter lightly until mixture resembles coarse meal. Add buttermilk and mix just until combined.
  3. Step 3

    Turn mixture out onto a floured countertop and form into a disc 1/2 in. (1 cm) thick. Brush with a bit of buttermilk and dust with oats. Cut into 8 wedges, transfer to a parchment paper-line baking sheet and bake for 15 to 20 min. or until just golden.
