- 4 Tbsp unsalted butter
- 3 shallots, finely sliced
- 4 cloves garlic, minced
- 2 Tbsp ginger, minced
- 2 small cinnamon sticks
- 1 medium butternut squash (approx. 3 lbs), peeled, seeded, and finely sliced
- 2 tsp salt
- 1.5 cups orzo
- 4 cups vegetable or chicken stock
- Zest of 1 lemon
- Juice of ½-1 lemon
- 1-2 Tbsp unsalted butter
- 4 Tbsp grated parmesan
- 2-3 tsp chilli oil
- Fresh cilantro, chopped (for garnish)

Step 1
Prepare the Orzo: Melt butter in a heavy-bottomed pot over medium heat until slightly browned. Add shallots and cook until lightly caramelized. Stir in cinnamon, garlic, and ginger; cook for 30-60 seconds until aromatic.Step 2
Cook the Squash: Add butternut squash and salt. Cover and stir occasionally until the squash becomes soft enough to break down with a spoon.Step 3
Cook the Orzo: Add orzo and stock. Lower heat, cover, and cook for 10 minutes, stirring occasionally to prevent sticking. The mixture should remain slightly loose.Step 4
Finish the Dish: Remove from heat and stir in lemon zest, juice, butter, and parmesan until creamy. Adjust seasoning if needed.Step 5
Serve: Transfer to a serving dish, drizzle with chilli oil, and garnish with cilantro. Serve immediately for a creamier texture or let rest for 5-10 minutes for a firmer consistency.
