Ingredients
- 8 hard-cooked eggs, cut in half, lengthwise
 - 1/4 cup mayonnaise 60 mL
 - 2 tsp Dijon mustard 10 mL
 - 2 tsp Topper Tangy Red Pepper 10 mL
 - 1/2 tsp prepared horseradish 2.5 mL
 - 4 slices Deli Roast Beef, cut into quarters
 - 1/4 cup crumbled blue cheese 60 mL
 - 2 tsp fresh chive pieces, about ½-in. long 10 mL
 - Pinch salt
 - Pinch pepper
 
Directions
Step 1
Scoop egg yolks into a bowl and mash with mayonnaise, mustard, red pepper topper, horseradish, salt and pepper until smooth. Spoon or pipe into egg whites.Step 2
Top each egg with a folded piece of roast beef and top with cheese. Sprinkle with chives and a little extra freshly ground black pepper, if desired.Step 3
Tip: Don’t care for blue cheese? Try crumbled goat cheese instead!
