Ingredients

  • 1 bag tortilla chips 250 g
  • 1 pkg cured deli meat, such as sliced chorizo, cut into strips 100 g
  • 1 cup shredded cooked chicken 250 mL
  • 1 1/2 cups grated smoked Gouda 375 mL
  • 1 cup diced fresh tomato 250 mL
  • 1/2 cup canned black beans, drained and rinsed 125 mL
  • 1/4 cup finely diced red onion 60 mL
  • 1 jalapeno, seeded and diced
  • 2 tbsp coarsely chopped cilantro 30 mL

Directions

  1. Step 1

    Preheat oven to 375°F (190°C). Line large pizza pan or baking sheet with parchment paper. Spread half the tortilla chips on the parchment. Scatter half the chorizo and chicken, followed by half the cheese, tomato, black beans, onion and jalapeno, onto the chips. Layer with remaining chips; sprinkle with remaining toppings (except cilantro).
  2. Step 2

    Bake 10 to 12 min. until cheese is melted and toppings are warmed through. Sprinkle with cilantro to serve.
